HIGH-HUMIDITY Problems with your Butter Cream Icing:
For High-humidty areas or during the hot summer months: Replace regular shortening or butter/margarine in your favorite butter cream recipe with Hy-Ratio Shortening. Hy-Ratio shortening is formulated specifically for icings and has a slightly higher melting point than regular shortening, butter and margarine. A better solution is to use paramount crystals with the Hy-Ratio Shortening. The result is an icing with a VERY high melting point that won't break down in high-heat, as quickly as regular shortening and/or butter/margarine.
